I am obsessed with rocky road bars. They just have
everything I love all rolled into one. I had planned on making one pan to give
away and another for S and I, but I just couldn’t wait so I made the “home”
batch tonight. I’m sure I’ll have to make another run for more ingrediants, but
it was well worth it!
I found this recipe on Pinterest (where else) over at SixSisters’ Stuff,
but have seen many variations before. The last time I made this I had to use a
double boiler and they turned out rock hard, you couldn’t even cut them. The
best part about this recipe is that there is no double boiler and it’s easy to
cut!
1 Bag milk chocolate chips (you could also use semi-sweet)
1 can Sweetened condensed milk
½ bag Marshmellows
1-2 cups Chopped Nuts (I used peanuts since they are my
favorite, but you can use whatever kind you like)
Pour the can of sweetened condensed milk and the chocolate
chips into a bowl and stir. Put in the microwave for about 1 minute, stir when
done if the chips are not melted put back in for 15 seconds at a time till
melted.
Mix in marshmellows and chopped nuts. Stir well otherwise
you will end up with all nuts/marshmallows in one place.
Once you have it mixed really well use tin foil or like I
did a gallon Ziploc bag cut open to line the pan. The Ziploc bag worked really
well for me and since the chocolate wasn’t boiling hot it didn’t melt the
plastic, plus I could just lightly spray the bag with Pam then put it in the
pan.
Pour the mixture into your pan and spread. If you use the
Ziploc bag make sure you are really pushing it into the corners. Once spread
put in the fridge for a couple hours to set (you could also use the freezer if
you need it to set faster).
Once it is all set, cut into squares and eat, I mean store
or give away.
